Buttery Buffalo Chicken Wings with Blue Cheese Aioli

A little tangy, smokey, spicy, herbal, and buttery...our Buttery Buffalo spice blend has it all. Try out this recipe for a show-stopping take on a classic Buffalo chicken wing combo. Try serving the wings with some crispy potatoes, romaine salad, or crisp carrot and celery crudités.
Ingredients
4 pounds chicken wings
1 tbsp avocado or olive oil
Spiva Cooking Buttery Buffalo Seasoning
1 cup mayonnaise
2 Tblsp – 1/4 cup buttermilk (use more for salad, less for aioli dip)
2 – 3 oz crumbled blue cheese, to taste
4 tsp lemon juice
1/2 tsp kosher salt
Romaine lettuce salad with desired veggie inclusions (we suggest julienned carrots, celery, and cucumber)
Procedure
- Toss chicken wings with enough of the Spiva Cooking Buttery Buffalo Rub and a little drizzle of avocado or olive oil to thoroughly coat.
- Allow to sit at room temperature for about an hour.
- Meanwhile, make the blue cheese aioli. Whisk mayonnaise, buttermilk, blue cheese, lemon juice, and kosher salt. Adjust seasoning as desired.
- Smoke the chicken wings for 2 hours at 225 degrees F with apple wood pellets.
- Remove from the smoker, and turn heat up to 500 degrees F.
- Brush the wings with a little more oil. Return chicken wings to the grill and sear until crispy, 4-5 minutes.
- Serve chicken wings with a romaine salad. Use the blue cheese aioli for dipping or for a salad dressing. Enjoy!
