Buttery Buffalo Chicken Wings with Blue Cheese Aioli

A little tangy, smokey, spicy, herbal, and buttery...our Buttery Buffalo spice blend has it all. Try out this recipe for a show-stopping take on a classic Buffalo chicken wing combo. Try serving the wings with some crispy potatoes, romaine salad, or crisp carrot and celery crudités.

Ingredients

4 pounds chicken wings

1 tbsp avocado or olive oil

Spiva Cooking Buttery Buffalo Seasoning

1 cup mayonnaise

2 Tblsp – 1/4 cup buttermilk (use more for salad, less for aioli dip)

2 – 3 oz crumbled blue cheese, to taste 

4 tsp lemon juice

1/2 tsp kosher salt

Romaine lettuce salad with desired veggie inclusions (we suggest julienned carrots, celery, and cucumber)

Procedure

  1. Toss chicken wings with enough of the Spiva Cooking Buttery Buffalo Rub and a little drizzle of avocado or olive oil to thoroughly coat.
  2. Allow to sit at room temperature for about an hour.
  3. Meanwhile, make the blue cheese aioli. Whisk mayonnaise, buttermilk, blue cheese, lemon juice, and kosher salt. Adjust seasoning as desired.
  4. Smoke the chicken wings for 2 hours at 225 degrees F with apple wood pellets.
  5. Remove from the smoker, and turn heat up to 500 degrees F. 
  6. Brush the wings with a little more oil. Return chicken wings to the grill and sear until crispy, 4-5 minutes. 
  7. Serve chicken wings with a romaine salad. Use the blue cheese aioli for dipping or for a salad dressing. Enjoy!
