Garlic Herb Tomato Soup

5 – 6 pounds of tomatoes, chopped

2 large sweet onions, chopped

Olive Oil, for drizzling 

Spiva Cooking Garlic Herb Rub

2 cups chicken or vegetable broth

¾ cup heavy cream


  •  Drizzle the tomatoes and onions with olive oil and sprinkle with a good amount of Garlic Herb Rub.  
  • Roast for 40 – 60 minutes at 400 in your oven till they are browning and mushy.  
  • Dump everything into a large pot and get all the juices from the pan in the pot.
  •  Add about 2 cups of chicken broth or veggie broth.  Then use an immersion hand blender and mix.  Or you can pour all into a blender in small batches. 
  •  Mix the heavy cream into soup.  Let sit on low on the stove top for about 45 minutes and stir frequently. Taste and add salt if needed.
  • Serve warm with a grilled cheese sandwich.
