To elevate our roasts, we love liberally coating the outer layer with one of our gourmet spice blends and a little avocado oil. This method will give you a flavorful, crispy outer crust. 

Ingredients

1- 3 bone prime rib roast, about 6 pounds

2-4 oz Spiva Cooking Steakhouse Seasoning, enough to cover a large roast thoroughly

3-4 Tblsp avocado or canola oil

Procedure

  1. Pull the prime roast out of the fridge 1 hour before roasting. If desired, trim the flesh around the bones for a beautiful presentation.
  2. Place the prime rib roast on a rack that is on top of a sheet pan (lined with foil for easier cleanup).
  3. Preheat the oven to 200 degrees F.
  4. Rub the entire prime rib roast thoroughly with Spiva Cooking Steakhouse Seasoning. Make sure that it is a thick, sandy like coating on the entire surface.
  5. Place in the oven and cook to an internal temperature of 130 degrees F, about 2 ½-3 ½ hours, depending on the size of your roast.
  6. Remove from the oven, and preheat the oven to 550 degrees F. 
  7. Rub the cooked lamb roast with a neutral, high heat tolerable oil such as avocado or canola oil.
  8. Return the roast to the oven and cook until the exterior is golden brown and crispy.
  9. Slice across the grain in ¼ inch slices and serve with your favorite sauce or gravy, crispy potatoes, and a salad.
