The Spiva Cooking Mediterranean Seasoning was initially created to compliment lamb, so it’s no question that this roast is a holiday showstopper. Our family celebrates Christmas Eve every year with Mediterranean Lamb, balsamic glaze sauce, and roasted vegetables. No need to wait for a holiday… if you can get your hands on a lamb roast, it makes the perfect leftovers for easy weeknight meals, such as our Lamb Pitas and Low Carb Gyro Bowls.
Ingredients
1 boneless lamb roast, about 6 pounds
2-4 oz Spiva Cooking Mediterranean Rub, enough to cover a large roast thoroughly
3-4 Tblsp avocado or canola oil
Procedure
- Pull the lamb roast out of the fridge 1 hour before roasting.
- Score the top layer of fat with a diamond like pattern, about ¼ inch into the lamb.
- Place the lamb on a rack that is on top of a sheet pan (lined with foil for easier cleanup).
- Preheat the oven to 200 degrees F.
- Rub the entire lamb roast thoroughly with Spiva Cooking Mediterranean Rub. Make sure that it is a thick, sandy like coating on the entire surface.
- Place in the oven and cook to an internal temperature of 130 degrees F, about 2 ½-3 ½ hours, depending on the size of your roast.
- Remove from the oven, and preheat the oven to 550 degrees F.
- Rub the cooked lamb roast with a neutral, high heat tolerable oil such as avocado or canola oil.
- Return the roast to the oven and cook until the exterior is golden brown and crispy.
- Slice across the grain in ¼ inch slices and serve with your favorite sauce, roasted vegetables, or salad.
