Pear Crisp
Serves 6-8
Filling-
3 large red pears
1 T flour (GF 1 for 1 ok)
1 tsp Spiva Cooking Pumpkin Spice
3 T sugar
1 T lemon juice
Topping-
¼ cup flour (GF 1 for 1 ok)
1 cup rolled oats
½ cup almond flour
¼ cup brown sugar
1 tsp sea salt
½ tsp Spiva Cooking Pumpkin Spice
1 tsp baking powder
5 T unsalted butter, cut in pieces
- Preheat the oven to 400 degrees F.
- Peel the red pears and then cut them into bite sized pieces.
- Mix together the cut pears, 1 T flour, 1 tsp pumpkin spice, 3 T sugar, and 1 T lemon juice.
- Add the filling to a 8×8 square baking dish.
- In a food processor, grind the rolled oats until they are coarse crumbs.
- Add the flour, almond flour, brown sugar, sea salt, pumpkin spice, and baking powder and process until combined well.
- Add the butter pieces to the food processor and pulse until pea-sized crumbs form.
- Top the pear filling mixture with an even layer of the topping.
- Bake the dish for 25-30 minutes. You want the mixture to be bubbling on the outer edges and the topping to be golden brown.
- Allow to cool for 30 minutes-1 hour before serving. Enjoy with your favorite vanilla ice cream.
