Za’atar Pasta Salad
4 cups baby spinach, chopped
½ cup kalamata olives, chopped
½ cup mild sauerkraut, we like Wild Brine brand (optional)
1 can chickpeas, drained and rinsed
5 oz feta cheese, crumbled or chopped
2-3 T Spiva Cooking Za’atar Seasoning
2 T extra virgin olive oil
1 lemon, juiced
8 oz rotini pasta
- Cook the rotini pasta according to the package directions, making sure to cook it only until al dente (the minimum cooking time). Drain and rinse in cold water.
- In a large bowl, combine the cooked pasta with all the ingredients and taste, adjusting seasoning if desired.
- Serve as a side dish or add some hearty grilled vegetables for a vegetarian main.
