Za’atar Pasta Salad

4 cups baby spinach, chopped

½ cup kalamata olives, chopped

½ cup mild sauerkraut, we like Wild Brine brand (optional)

1 can chickpeas, drained and rinsed

5 oz feta cheese, crumbled or chopped

2-3 T Spiva Cooking Za’atar Seasoning

2 T extra virgin olive oil

1 lemon, juiced

8 oz rotini pasta

 

  1. Cook the rotini pasta according to the package directions, making sure to cook it only until al dente (the minimum cooking time). Drain and rinse in cold water.
  2. In a large bowl, combine the cooked pasta with all the ingredients and taste, adjusting seasoning if desired.
  3. Serve as a side dish or add some hearty grilled vegetables for a vegetarian main.
