Zesty Pickles

These pickles are great to have on hand for all your sandwich sides and salad components. We love enjoying these with salami, cheese, and crackers as well.
Ingredients
1 quart apple cider vinegar
1 pint water
1 cup coconut sugar
1/2 cup kosher salt
4 Tblsp Spiva Cooking Pickling Spice
8 cloves garlic
1 red onion, cut into 1/4 inch slices
1 small or half large cauliflower, cut into 1/2-1 inch florets
2 red bell peppers, cut into 1/4 inch slices
6-7 persian cucumbers, ends trimmed and halved lengthwise
Procedure
- Add the apple cider vinegar, water, coconut sugar, kosher salt, and garlic cloves to a large pot and mix.
- Bring the ingredients to a boil and allow the sugar and salt to dissolve.
- Remove the liquid from the heat and add all the prepped vegetables.
- Allow to cool, then ladle pickles and liquid into quarts size jars.
- Store the pickles in the fridge for up to 3 weeks.
