Basic Salmon Method

Salmon is such an easy way to get a healthy protein on the table in no time. With our premium freshly ground spice blends, no marinading is required. Simply coat the surface liberally, sauté for a few minutes, and serve. 

Ingredients

4 wild salmon filets, thawed if frozen

1 1/2-2 Tblsp Spiva Cooking BBQ Rub or Spiva Cooking Meditteranean Seasoning 

3 Tblsp avocado oil

1 lemon, juiced

Procedure

  1. If you do not want to eat the skin, begin by removing it. With the filet skin side down, insert a sharp knife in between the skin and the meat by slightly sawing the knife back and forth. Once you have enough exposed skin, hold on to it with one hand while continuing to saw back and forth, pressing the flat side of the knife firmly down on the cutting board as you work.
  2. Using paper towels, gently press each side to absorb all extra moisture (do this for fresh and frozen filets).
  3. Season both sides of the salmon filets liberally with your desired Spiva Cooking Seasoning. 
  4. Heat a large cast iron or heavy-bottomed pan with the avocado oil on medium heat until it feels hot when you place your hand a few inches about the pan.
  5. Add the salmon filets in a single layer, making sure there is a little space in between each one. Depending on your pan size, you may choose to saute them in 2 batches. If so, split the avocado oil in half between the batches. 
  6. Turn the heat down slightly and allow the salmon to cook undisturbed for about 3 minutes. It should be golden brown and crispy. If you look at the middle of the filet from a side view, the meat should have cooked about halfway up from the bottom. 
  7. Flip the salmon and allow to cook on the other side for another 3 minutes or so. We usually pull our salmon at about 125-130 degrees F, when it begins to become flaky in the middle. 
  8. Remove the salmon to a plate and squeeze some fresh lemon juice on top. Serve with your favorite sides.
