Lemony Broccolini

Broccolini is quick cooking and a great vegetable side for any of your tasty creations. The lemon in this recipe compliments a rich protein nicely. Allowing the broccolini to caramelize in the pan develops a lot of flavor, so don’t skip that step. If you are serving this with a more basic flavored protein, try finishing with some grated parmesan cheese and butter. Alternatively, try sun-dried tomatoes and toasted pine nuts would be delicious. 

Ingredients

2 bunches broccolini, large end stems removed

3 cloves garlic, smashed

2 Tblsp olive oil

1 lemon, zested and juiced

3/4-1 cup of chicken bone broth or stock 

Kosher salt to taste

Procedure

  1. Place oil and smashed garlic cloves in a saute pan over medium heat and allow to become golden brown. 
  2. Add broccolini and saute until it starts to caramelize. Try not to overcrowd the pan and keep the broccolini in a single layer. Cook in 2 batches if your pan is on the smaller side. 
  3. Add the chicken broth and let simmer and cook down until reduced to almost dry. Remove from the heat when it is just tender. If you are planning on holding it in a warm oven until you have finished cooking your meal, make sure to remove from heat a little earlier than you normally would (so it won’t get mushy in the oven). 
  4. Add lemon zest, juice, and salt and pepper to taste.
