Open Faced Red Eye Breakfast Sandwich

Coffee lovers unite! Besides the delicious earthy barbeque flavor provided by the coffee chili Red Eye Rub, this dish includes coffee glazed prosciutto. Add a cup of coffee to go along and you have the perfect java trifecta. Cheers to a delicious start to your day.  

Ingredients

8 ounces cream cheese

4 Tblsp Spiva Cooking Red Eye Rub, divided

12 slices prosciutto

4 cups brewed coffee

3 roma tomatoes, sliced 1/4 inch thickness

8 eggs

8 thinly sliced pieces of crusty bread, such as sourdough

Avocado oil, for frying

Procedure

  1. Preferably the day before serving, preheat your oven or smoker to 225 degrees F. 
  2. Score crosshatch lines all over the block of cream cheese with a sharp knife. Using about 2 Tblsp (or to taste) Spiva Cooking Red Eye Rub, season the exterior of the cream cheese. 
  3. Place on a sheet pan and slow roast in the oven or smoke for 2 hours. If proceeding with your recipe, hold warm until ready to spread. If saving for another time, cool and store in the fridge. 
  4. If your cream cheese is cold, place in a baking dish and cover. Allow it to slowly warm up in the oven while you prepare the breakfast sandwiches.
  5.  Brush the bread slices with a little oil and toast in the oven, toaster, or in a pan until golden and crispy. Divide between 4 plates.
  6. Meanwhile, heat a saute pan over high heat with a little oil.
  7. Dip the prosciutto slices in brewed coffee, then place in pan to fry on one side. Flip, add a little more coffee, and allow to become glazed.
  8. Place fried prosciutto slices in a bowl and add some additional brewed coffee. Reserve.
  9.  In the same pan, add a little more oil and then place tomatoes in a single layer, working in batches if necessary. Flip tomatoes and allow them to become slightly charred and softened. Reserve on a plate. 
  10. Spread the smoked cream cheese equally over all the bread slices. Add 3 prosciutto slices to each toast, followed by the charred tomatoes.
  11. Fry the eggs as desired, preferably keeping the yolk soft and liquid. Season the eggs with Spiva Cooking Red Eye Rub instead of salt.
  12. Place freshly fried eggs on top of each slice of bread and serve immediately. Enjoy!
