Pumpkin Butter Filling
1 can pumpkin puree
1 cup apple juice
1 T Spiva Cooking Pumpkin Spice Blend
¼ cup pure maple syrup
¼ cup brown sugar
6 T butter
Pinch of salt
- Mix all the ingredients in a small saucepan and bring to a boil then immediately reduce to a low simmer.
- Cover with a lid and allow to cook for about 45 minutes, or until quite thick. Make sure to stir it periodically so it won’t stick to the bottom of the pot and burn. Watch out for the bubbles, they sometimes spurt up and can be very hot!
- Remove from heat and store in a container in the fridge until cool and ready to use as a cinnamon roll filling or spread for toast.
- To use for cinnamon rolls, prepare your favorite dough as directed. Instead of filling the dough with butter, sugar, and cinnamon- spread a thick coating of the pumpkin butter filling on the dough before rolling up and proceeding with your recipe.
