Chimichurri sauce is the perfect all purpose sauce for both protein and vegetables alike because it is flavorful, herby, and healthy. Try making this sauce if you have herbs or greens on hand that are starting to wilt.
Ingredients
1 packed cup fresh arugula greens
1 packed cup (about a cup) parsley, with the big stems removed
3 cloves garlic
2 Tblsp red wine vinegar
1 Tblsp dried oregano
1/8 tsp crushed red pepper
1/2 tsp kosher salt
3/4 cup extra virgin olive oil
Procedure
In a food processor, blend the arugula, parsley, garlic, red wine vinegar, dried oregano, crushed red pepper, and salt until combined.
Scrap the bowl and then continue to blend, streaming in the olive oil slowly until the a smooth sauce is formed. Taste and adjust salt and acidity as desired.
